I was wonderfully surprised at the quality and quantity of vegetables in the mix. And they were delicious. I included the juice from the can of tomatoes and used both vegetable broth and chicken bone broth which made the soup even more nutritious.

This soup is so easy to mix and cook! All that is needed is a can of tomatoes. I like to choose different flavors of tomatoes. I also add a cup of chopped rotisserie chicken during the last 5 minutes!
